Gluten, Dairy and Sugar Free Blueberry Pancakes

Following on from the gluten, dairy and sugar free blueberry muffins recipe I posted last month, I have a new recipe for gluten, dairy and sugar free blueberry pancakes. This recipe is so easy. You literally need 3 ingredients, and the pancakes were delicious!! As I explained on Snapchat, my doctor has started letting me reintroduce some fruits into my diet (more on why my diet is restricted here, here and here), so I started with banana. I love avocado but I feel like I’ve been having it too much, so it was nice to be able to mix it up for breakfast. I’ll also be able to make banana based bread, smoothies, froyo, ice cream… the list goes on and yes I’m excited (sometimes it’s the little things). 🙂 I got such great feedback on the blueberry muffins and so many of you made them, which I absolutely loved seeing. Ingredients:

For the pancakes:

1 egg
1 banana
A handful of blueberries (or how many you feel like adding)

For the pan:

Coconut oil

My additions – To garnish:

Lemon juice
Strawberries
Blueberries

Method:

Mash the banana with a fork until it’s smooth and has no lumps. In another bowl, beat the egg and then add to the banana mix. Mix together. Add the coconut oil to a pan (at a low-medium heat). Add some of the pancake mix to the pan and cook just like would with normal pancakes.

To garnish, as I’m not allowed maple syrup, nutella or sugar (I totally cheated with all my treats in The Hamptons last weekend), I added some lemon juice and topped them off with strawberries and blueberries… deeeeeee-lish!!!

If you need to get some extra protein into your diet (which I definitely do), you can add some to the pancake mix. I might try this next time. 🙂

A few tips:

If you don’t have a lot of time, use a blender to mix your ingredients. It’ll be super quick.
The pancakes can fall apart very easily. I don’t know how mine came out so good, but they don’t have any ingredients to give them a consistency that will hold them together. You can add some almond or coconut flour to hold them together better if yours are falling apart.
